The Chelsea forward opened the scoring in the 12th minute, reacting quickest to a rebound after Sadio Mane’s initial effort was parried.
Jackson doubled his tally early in the second half with a composed finish, cementing the Teranga Lions’ dominance as they began their quest to reclaim the continental crown.
Mauritania struggled to contain Senegal’s high-pressing game and rarely threatened Edouard Mendy’s goal. Lamine Camara added a third late on with a spectacular long-range strike to put the result beyond doubt.
